How to make the chestnut cake
Ingredients for 6-8 people
- 3 eggs.
- 180 g sugar.
- 80 ml vegetable oil.
- 250 g chestnut flour.
- 200 ml milk.
- 30 g unsweetened cocoa powder.
- 10 g blanched almonds.
- 2 small cups espresso coffee.
- 80 g chocolate drops.
- 1 sachet baking powder.
- icing sugar for dusting.
For this recipe, we recommend a sweet coffee with a refined finish such as that of the 100% Arabica blends.
Procedure:
- Beat the eggs and sugar together in a large bowl or a food processor.
2. Drizzle in the vegetable oil, mixing with a hand or electric whisk until completely blended into the mixture.
3. Now sift the chestnut flour into the mixture, a little at a time, using a sieve.
4. Add the unsweetened cocoa powder, again using a sieve to prevent lumps from forming.
5. Add the baking powder and stir well, but gently, until completely blended with the rest of the mixture.
6. Separately, mix the milk with the two small cups of coffee then add to the mixture, a little at a time.
7. Mix with a hand or electric whisk until smooth.
8. When ready, leave to rest for about ten minutes.
9. Meanwhile, chop the almonds, either finely or roughly as you prefer, and set aside.
10. After ten minutes, add the chopped almonds and the chocolate drops to the mixture.
11. Now, everything is ready and all you have to do is bake the cake in a pre-heated oven at 180° for 30 to 40 minutes.
12. Check the cake regularly after 30 minutes to see whether it is baked, since cooking times can vary from oven to oven.
13. When the cake is ready, leave to cool completely.
